Score the bottom of each tomato with a small X and carefully place them into the boiling water for about 30 seconds. Remove them and immediately transfer to the ice bath. Once cool, the skins should easily peel away.

2. Chop the Tomatoes Once peeled, chop the tomatoes into small pieces, removing excess seeds if desired. Set aside.


3. Sauté the Aromatics In a large skillet or saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes. Stir in the minced garlic and cook for another minute, being careful not to let it burn.
