A Delicious Spaghetti Sauce Using Fresh Tomatoes

There’s nothing quite like a homemade spaghetti sauce made from fresh tomatoes. The burst of flavor from ripe tomatoes truly elevates the dish, making your pasta taste exceptional. Here’s a simple recipe to create your own delicious spaghetti sauce that will impress your family and friends.

Ingredients

- 2 pounds of fresh ripe tomatoes (Roma or any variety you prefer) - 4 cloves of garlic, minced - 1 medium onion, finely chopped - 1/4 cup of olive oil - 1 teaspoon of salt (adjust to taste) - 1/2 teaspoon of black pepper - 1 teaspoon of dried basil or a handful of fresh basil leaves, chopped - 1 teaspoon of sugar (optional, to balance acidity) - Red pepper flakes (optional, for a spicy kick)

Instructions

1. Prepare the Tomatoes Start by blanching the tomatoes to easily remove the skins. Bring a pot of water to a boil, and prepare an ice bath. Score the bottom of each tomato with an X and place them in the boiling water for about 30 seconds. Once the skins start to wrinkle, transfer the tomatoes to the ice bath to cool. Peel off the skins, core them, and chop the tomatoes into small pieces.

2. Cook the Base In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute, being careful not to let it burn.

3. Combine Ingredients Add the chopped tomatoes to the skillet, along with salt, black pepper, basil, and sugar (if using). Stir everything together and bring the mixture to a gentle simmer.

4. Simmer Reduce the heat to low and let the sauce simmer for around 30-45 minutes, stirring occasionally. This will allow the flavors to meld and the sauce to thicken.

5. Finish and Serve Once the sauce has reached your desired consistency, taste and adjust seasoning if necessary. If you like a smoother sauce, you can use an immersion blender to puree it slightly. Serve the sauce over al dente spaghetti and garnish with extra basil and freshly grated Parmesan cheese.

Using fresh tomatoes makes a significant difference in flavor and texture. This recipe is not only easy to make but also adaptable, allowing you to experiment with different herbs and spices. Enjoy your homemade spaghetti sauce—a simple yet satisfying meal that celebrates fresh ingredients!
