why do i crave tomato juice-HOW TO MAKE TOMATO JUICE WITHOUT A JUICER

You can, of course, freeze tomatoes. It’s not difficult. They need to be peeled, which involves blanching them until the skin cracks, then peeling the skin off by hand, setting them on trays or in freezer bags, and then popping them into the freezer. The problem that I have with freezing tomatoes, however, is that we just don’t eat all that many frozen tomatoes. I’ll add a few to my chili, but that’s about it. The rest just hang out in the freezer, taking up valuable room that could be used to freeze more important things like ice cream and zucchini bread.Last summer, my husband attempted to make tomato juice in the blender. It was a disaster. It tasted watery and unpleasant, like you squeezed a tomato too hard and licked the juice off your hand. While we shopped for a juicer this spring, we never made up our mind as to what to buy. We found ourselves at the height of the summer harvest sans juicer and sans plans. That’s when I decided to pull out my trusty Ball Book of Home Preserving and figure out what to do with the tomatoes, which by this time had multiplied like the tribbles in Star Trek.

When you have lots of fresh tomatoes on hand, turn them into homemade tomato juice that can be frozen or canned. It's a perfect way to preserve tomatoes when they're in season, whether you find them at a reasonable price or because your garden yielded more than you can use right away. With jars of tomato juice ready, you'll be all set when soup season arrives. It can also be thawed for a cold glass of tomato juice or a bloody Mary.

When canning tomato juice, follow the directions in the recipe card below, but make sure to leave about a half inch to one inch of air space (or as some say an inch headspace) at the top below the lids. Store it in a cool, dry place and you’ll be able to enjoy this juice for up to two years. If you are looking to make a LOT of juice (which I like to make at least 25 quarts at a time) you will want to save yourself some frustration by getting a Tomato Strainer. I also have the little attachments. This will save you a lot of time having to press everything by hand through a colander.

Of all the things you can do to preserve fresh, summer tomatoes, Homemade Tomato Vegetable Juice is one of my favorites. It’s so easy to do and you can adjust the flavor of the juice in so many ways, by using a combination of different vegetables that you like.I like to include a good variety and love the flavor that the tomato juice gets from the onion, garlic, celery and carrots. Of course, you can keep it very simple by just cooking the tomatoes alone and having a very clean tomato flavor. Sometimes, I also like to step it up a notch and add beets, herbs (such as thyme, parsley, dill, etc.), bell peppers and even add some heat to the juice by adding some hot peppers. Today, I am sharing the most simple version, but feel free to add more veggies and to customize the flavor by playing around with different options.

You can also use the blender and strainer method. To do this, simply blend about a quart of cooked tomatoes at a time until pureed and then pour through a strainer to remove seeds and remaining bits of peel. I have never tried this method but would imagine it would work well, although it might be more time-consuming and may possibly make a thinner tomato juice. If for some reason you open a jar of home-canned tomato juice and don’t need to use the full amount, simply put the remainder in a freezer-safe container and freeze it to use later.
